Costa Rican

This washed offering was produced by Volcafe Way certified smallholders in Paramo in the Pérez Zeledón department. Small coffee farms dot the southeastern slopes of the Talamanca mountain range where this lot was cultivated. After picking, ripe red coffee cherries were delivered to our receiving stations, then fully washed at Beneficio El General, our regional mill.

Altitude: 690 meters
Varieties: Cerro Dorado
Processing: Washed
Tasting Notes: Sweet and Low Acidity.  Toasted sugar and honeydew melon.  Really smooth, light body.  Easy to drink all day.

Colombia Supremo
Risaralda Sofia

Colombia Antioquia Supremo is sourced from family owned farms located within the municipalities in the department of Antioquia, Colombia. On average, each producer cultivates their coffee on less than 5 acres of land. Coffee producers use their own micro-mill to process harvested cherries, which allows for meticulous care in depulping, fermenting, and drying the coffee.

Altitude: 1300 – 1650 meters
Varieties: Castillo, Caturra, Colombia, and Typica
Processing: Washed
Tasting Notes: Sweet and Rich.  Chocolate brownie with an orange citrus finish.  Medium body.

Nicaragua Jinotega
Finca La Rubis

Juan de Dios Castillo started his own farm called El Pastoral, which has 150 acres of coffee production. Cherries from Finca Pastoral are selected for more specialized processing rather than the more common washed processing. El pastoral uses the all-natural process by which the cherry pulp falls off the seeds without water. During the harvest, the coffee cherries are carefully harvested and transported to the dry-mill where the weather conditions are more stable for evenly drying coffee inside the cherry. After drying is completed, the coffee is stored and later prepared for export at the same dry-mill.

Processing: Full natural and dried in the sun
Tasting Notes: Sweet and smooth.  Strawberry and cereal with a clean finish.  Medium body that is easy to drink.

Ethiopia Natural
Mokasida

Sweet and smooth.  Dark chocolate, with a dark berry finish.  Medium body. Heirloom varieties and traditional processing on small 1-2 acre family garden farm. This is a Heirloom Ethiopia varietal, full-natural processed coffee and grown by small growers in Mokasida.
